For what purpose should we choose different waters?
Hydration / Thirst quenching: waters with low or medium mineral content (TDS: 0-800 mg/l)
Water - Food harmony:
light meals, appetizers, soups, dishes with a less intense taste - non-carbonated or carbonated waters with low and medium mineral content
heavier, fattier, more intensely flavored foods - carbonated waters with medium and high mineral content
Surprisingly good pairings and flavor harmonies can also be created by contrasting the main flavors found in different waters and foods (sweet-salty-sour-bitter).
Wines: the more neutral and softer the water is, the better it can highlight the flavor notes and character of the wines. For light white and rosé wines, carbonated waters with a lower mineral content can be the ideal accompaniments, for red wines with medium mineral content, and for sparkling wines, softer waters with no carbonation can provide the right harmony.
Curative waters: waters with proven medicinal effects, due to their high / very high mineral content, represent a separate category, but in some cases, we can create surprisingly good gastronomic pairings with them
